Thank you so much for the terrific response to our first newsletter. We really do welcome your comments & suggestions. Procrastination is one of my strong points, ie; March & April ran together for the second attempt. The important part of a goal -- is having one! My goal is to be on time next month...
Looking Back
They say time flies when your having fun. -- and I can only add a hearty "amen" to that. April 1st. (no foolin') thirty years ago, marked the beginning of three decades filled with fun (certainly), but also worry, change, fulfillment, disappointments -- a rollercoaster ride I wouldn't change if I could. (well may be a few things)

If it's true that "things get better with age" then I'm approaching magnificent - and so are you, if you can remember the O.V. in 1978. The bar was where the game room is now located. The present bar (less five feet or so of an addition) was the "snowmobile room" and had black booths around the perimeter. It was entered from a door located where the waitress station is. Red upholstered booths and large bucket red chairs on rollers (many can attest to the hazard this presented) adorned the main dining room. The smaller back dining area had "beautiful" green booths.

Our Prime Bib Smorgasbord was $7.95. A Lobster Crab Legs & Shrimp Dinner was $11.00, and Brunch $4.25. Cooks wages were high, $3.50 an hour, and dishwashers $2.60. I wasn't even on the payroll.

So, We're having a party and YOU are invited!

RECIPE of the Month

Caramelized Pecan Pie
I was asked to share the recipe for our Caramelized Pecan Pie - Our most popular desert. I'd like to take credit for it's creation, but the credit belongs to Burnstad's European Cafe' in Tomah WI as submitted to the Wisconsin Restaurant Assn. & published in "Our Best Cookbook"
1 - 15 ounce bag of caramels
1/2 - Cup Wisconsin Butter
1 - 6oz can evaporated milk
1 - Cup chopped pecans
1 - 10 inch unbaked pie crust
2 - 8oz packages Wisconsin Cream Cheese
1/2 - Cup sugar
2 - Eggs
1 - Teaspoon vanilla
Melt together caramels, butter, and evaporated milk. Stir until smooth. Place pecans in bottom of unbaked pie crust. Lightly spread all but 1 cup of caramel mixture over pecans. Reserve remaining caramel mixture.

Soften cream cheese with mixer until fluffy. Add sugar, eggs, and vanilla, and pour batter over caramel layer. Bake at 350 degrees until pie is set in center - about 35 to 40 minutes. Set aside to cool.

Top with reserved caramel mixture and garnish with a sprinkle of pecans in the middle of pie. Yields 8 - 10 servings...
